In order for breeders to keep and breed the traditional rare and minority breeds, they have to find a market for surplus stock.
Not all piglets from a litter can be used for breeding. Often breeders can sell on the gilts (females) for breeding, if they meet the required standards for that breed. However, there is not the need for so many hogs (males). One good boar will be able to sire many pigs in his lifetime.
It is not possible for any breeder to keep and feed excess pigs without facing financial ruin, so to prevent breeders stopping breeding or keeping rare breeds it is necessary to sell them on as quality premium rare breed meat.
By buying premium rare breed pork, you are helping to conserve rare breeds.
